I’ve found that a lot of people are afraid to touch food, and this always takes me aback, because our hands are our most important tool. Touching food is good. It brings you closer to the food itself and gives you results impossible to achieve when you’re using long metal utensils. The closer you are to the food, the more control you have. Learn to handle food in your hands- don’t be afraid you’re going to get burned laying a fillet into hot oil. When you have better control of the food, you can work closer to the heat.

Tidiness is something that happens when you have frontal brain damage. You get very tidy. Tidiness is symptomatic of brain damage. Creativity, on the other hand, is symptomatic of a fairly whole brain, and is usually a disordered affair. The tolerance for disorder is one of the very few healthy signs in life. If you can tolerate disorder, you are probably healthy. Creativity is seldom tidy.

The real work of planet-saving will be small, humble and humbling, and (insofar as it involves love) pleasing and rewarding. Its jobs will be too many to count, too many to report, too many to be publicly noticed or rewarded, too small to make anyone rich or famous.
